Spud's Chocolate Chip Cookies

This is a favorite of mine. My uncle gave my mom a cookbook years ago from Australia and this recipe in there. Most of you will know this recipe from it's other name, Neiman Marcus $250 cookies. I normally make only half the recipe since the full makes around 150+ cookies.

Spud's Chocolate Chip Cookies



2 C. Butter, softened
2 C. Sugar (you can use Splenda as well and taste just as yummy)
2 C. Packed brown sugar (you can use brown Splenda as well)
4 Eggs
4 C. Flour
5 C. Oatmeal, blended to flour (measure, then blend)
1 t. Salt
2 t. Baking powder
2 t. Baking soda
24 oz. Semi-sweet chocolate chips
8 oz Milk chocolate bar, grated
3 C. Chopped nuts (you can use any kind you like, but pecans or almonds are the best)
2 t. Vanilla (I use Almond a lot to add a different flavor)



Preheat oven to 375 degrees. Cream butter and sugars together. Add eggs one at a time and vanilla. Mix together with flour, oatmeal, salt, baking powder, and baking soda. Add chips, chocolate, and nuts; stirring by hand. Form into golf ball size (I make my smaller) mounds and place at least 2" apart on ungreased cookie sheets. Bake for 10 minutes or until light golden brown.

They are best right out of the oven. Enjoy!
